Healthy Guacamole w/ Toasted Pumpkin Seeds

I was raised in Houston, Texas so I can never turn down a freshly made guacamole. The one I am sharing with you today is my version of one of my favorite restaurants here in Scottsdale called The Mission. They make their guacamole tableside and it is super fresh. There is no reason all of the ingredients in a healthy guacamole shouldn’t be fresh from a garden. Don’t put preservatives or mayonaise in it… ever:)
This beautiful bowl was given to us by our childhood friends Denay and Roger when they visited from Texas a few weeks ago.

Healthy Guacamole w/ Toasted Pumpkin Seeds
Ingredients
  • 3 avocados mashed (save one seed)
  • ½ red onion diced fine
  • ½ jalepeno chopped very fine
  • 2 cloves garlic minced
  • 6-8 cherry tomatoes chopped
  • handful cilantro chopped
  • 1 tsp. fresh lime juice
  • 1 tsp. garlic powder
  • salt and pepper
  • ½ cup pumpkin seeds
Instructions
  1. Preheat oven to 400 degrees. Place pumpkin seeds on baking sheet and roast for 3-4 minutes. Set to the side.
  2. Mash avocados in a bowl until smooth.
  3. Add remaining ingredients (except seeds) and blend gently with a spoon.
  4. Sprinkle the toasted pumpkin seeds on top and serve with tortilla chips or spoon on top of a salad.
